Ingredients

 

  • MIGHTY SPARK Southwest-Style Chicken Patties
  • MARIA AND RICARDO'S White Corn Tortillas
  • HUNGRYROOT Rainbow Veggie Mix
  • MONTCHEVRE Crumbled Goat Cheese

  

Instructions

 

  1. Heat 1 tbsp oil in skillet over med-high + cook veggie mix with salt/pep 3-5 min until tender; set aside
  2. Heat 1 tsp oil in skillet over med-high; add burgers, break into chunks + sear undisturbed 1-2 min; flip meat over, then break into small pieces; sauté 3-4 min more until fully cooked + no pinkness remains; set aside
  3. Stack 4 tortillas on a plate + wrap with a damp paper towel; microwave 15-30 sec or until warm + soft
  4. Add fillings to tortillas, sprinkle on 1-2 tbsp cheese per taco, then fold + enjoy!
