Ingredients

  • JOSIE'S ORGANICS Organic Southwest Chopped Salad Kit
  • MIGHTY SPARK FOOD Ground Fajita Chicken
  • ANDREW + EVERETT Shredded Sharp Cheddar Cheese
  • HUNGRYROOT Sweet Bicolor Corn

  

Instructions

 

  1. Heat 1 tsp oil in skillet over med; add half the chicken to pan, break, into small pieces + sauté 7-10 min until firm + fully cooked; set aside
  2. Slice kernels off cob from 2 ears of corn; heat 1 tbsp oil in skillet over med-high + sauté corn with salt/pep 2-4 min until tender; set aside
  3. Add salad kit to a large bowl, drizzle with dressing + toss
  4. Divide salad between plates, top each salad with chicken, corn, and 1-2 tbsp cheese
