FAJITA CHICKEN CHOP SALAD

Ingredients
- JOSIE'S ORGANICS Organic Southwest Chopped Salad Kit
- MIGHTY SPARK FOOD Ground Fajita Chicken
- ANDREW + EVERETT Shredded Sharp Cheddar Cheese
- HUNGRYROOT Sweet Bicolor Corn
Instructions
- Heat 1 tsp oil in skillet over med; add half the chicken to pan, break, into small pieces + sauté 7-10 min until firm + fully cooked; set aside
- Slice kernels off cob from 2 ears of corn; heat 1 tbsp oil in skillet over med-high + sauté corn with salt/pep 2-4 min until tender; set aside
- Add salad kit to a large bowl, drizzle with dressing + toss
- Divide salad between plates, top each salad with chicken, corn, and 1-2 tbsp cheese
