FAJITA CHICKEN & BLACK BEAN TOSTADAS

Ingredients
- MIGHTY SPARK FOOD Ground Fajita Chicken
- MARIA AND RICARDO'S White Corn Tortillas
- HUNGRYROOT Cuban Spiced Black Beans
- HUNGRYROOT Rainbow Veggie Mix
Instructions
- Preheat oven to 400°F + place 4 tortillas on baking sheet, then brush lightly with oil + pinch of salt; bake 7-9 min until starting to crisp
- Meanwhile microwave beans in a covered, microwave-safe bowl 1 min; divide and spread onto tostadas
- Heat 1 tsp oil in skillet over med; add half the chicken to pan, break, into small pieces + sauté 7-10 min until firm + fully cooked add to tostadas
- Heat 1 tbsp oil in skillet over med-high + cook veggie mix with salt/pep 3-5 min til tender; add to tostadas
