Ingredients

  • MIGHTY SPARK FOOD Ground Fajita Chicken
  • HUNGRYROOT Rainbow Veggie Mix
  • HUNGRYROOT Lentil Quinoa Rice Mix
  • HOPE FOODS Organic Green Chile Guacamole

 

Instructions

  1. Heat 1 tsp oil in skillet over med; add half the chicken to pan, break, into small pieces + sauté 7-10 min until firm + fully cooked; set aside
  2. Heat 1 tbsp oil in skillet over med-high + cook veggie mix with salt/pep 3-5 min until tender; set aside
  3. Heat skillet over med-high + stir rice with 1 tbsp water for 2 min, until warm
  4. Add all items to bowls starting with rice and dollop on 1-2 tbsp guacamole
