BRUSCHETTA CHICKEN STUFFED SHELLS

Stuffed shells is one of those miraculous recipes that FEELS really fancy and makes for a gorgeous table-setting, but in reality it's pretty simple to put together. Using our Ground Bruschetta Chicken really ups the ante on this classic dish!
INGREDIENTS
- 1lb Mighty Spark’s Ground Bruschetta Chicken
- 1 box Jumbo Pasta Shells, cooked al dente
- 4 cups Spinach
- 12 oz Ricotta
- 1 cup Mozzarella
- ½ cup Parmesan, freshly shredded preferred
- 1 large Egg
- 1 Jar Marinara of choice
- Salt & Pepper to preference
- Oil of choice
INSTRUCTIONS
- Preheat oven to 350*
- Begin by browning Mighty Spark’s Ground Bruschetta Chicken in a lightly oiled pan, keeping the crumbles fairly small. Once the chicken is cooked, add the spinach and stir until slightly wilted. Remove mixture from the pan and place onto a paper towel lined plate to cool before next step
- In large mixing bowl, combine the chicken and spinach with the ricotta, mozzarella, parmesan, and egg. You may add your salt and pepper here, if desired
- In your baking dish, cover the bottom 1” with marinara sauce. Then, carefully, scoop a generous amount of stuffing mix into the large pasta shells and place into the dish
- Cover the dish and bake for 25 minutes. Remove the cover from the dish and bake uncovered for another 10-15 minutes. Serve with freshly grated parmesan on top
