Ingredients

- LITTLE POTATO COMPANY Fingerling Potatoes
- WHOLESUM Organic Zucchini 2 Pack
- HUNGRYROOT Superfood Tomato
Instructions
- Preheat oven to 400°F; slice potatoes in half lengthwise, mix with 2 tbsp oil, salt/pep, then spread on a sheet pan cut side down; roast 30-35 min til tender
- Meanwhile heat lightly oiled skillet over medium; cook burgers 10 min, flipping every 1-2 min to avoid burning til hot + fully cooked
- Wash, then slice one zucchini into ¼-inch rounds; heat 1 tsp oil in skillet over med-high, add to pan, season with salt/pep + sauté 3-4 min; add to plates
- Add all to plates + drizzle 1-2 tbsp sauce per plate
