Mighty Spark's seasoned ground chicken – made with diced tomatoes, garlic, basil and premium cuts of all-natural chicken – is your secret ingredient to the most convenient and flavorful meatballs.

Recipe provided by Fresh Thyme Market

  • 1 lb. Mighty Spark Bruschetta Ground Chicken
  • ¼ cup breadcrumbs
  • ¼ cup shredded parmesan cheese
  • 1 egg
  • 1 baguette
  • 2 tbsp. extra-virgin olive oil
  • Garlic olive oil spray
  • ¼ cup roughly chopped fresh Italian parsley
  • 1 cup tomato basil pasta sauce
  • 16 slices of fresh mozzarella cheese

  1. Preheat the oven to 375 and line a large baking sheet with aluminum foil.
  2. Using a small cutting board, slice take-and-bake French baguette into 1-inch-thick slices and place on baking sheet. Generously coat slices of bread with garlic olive oil spray.
  3. Next, roughly chop parsley and sprinkle ½ the parsley on top of the slices of bread. Place in the oven and bake for 8-10 minutes until lightly toasted.
  4. While the toast bites are baking, combine bruschetta ground chicken, breadcrumbs, parmesan cheese and egg in a large mixing bowl. Mix well until combined and then roll into 16 small meatballs.
  5. In a large skillet place 2 tbsp. of olive oil and heat on medium for 1-2 minutes. Add meatballs and cook for 3-4 minutes on each side until golden brown.
  6. Remove the toast bites from the oven and top each toast bite with 1 tbsp. pasta sauce, add 1 meatball and then top with 1 slice of fresh mozzarella.
  7. Place back into the oven and bake for an additional 5 minutes until cheese is melted.
  8. Remove from the oven and top with remaining chopped parsley and enjoy!
