Bruschetta Chicken-Bite Appetizer Recipe

INGREDIENTS
- 1 lb. Mighty Spark Bruschetta Ground Chicken
- ¼ cup breadcrumbs
- ¼ cup shredded parmesan cheese
- 1 egg
- 1 baguette
- 2 tbsp. extra-virgin olive oil
- Garlic olive oil spray
- ¼ cup roughly chopped fresh Italian parsley
- 1 cup tomato basil pasta sauce
- 16 slices of fresh mozzarella cheese
INSTRUCTIONS
- Preheat the oven to 375 and line a large baking sheet with aluminum foil.
- Using a small cutting board, slice take-and-bake French baguette into 1-inch-thick slices and place on baking sheet. Generously coat slices of bread with garlic olive oil spray.
- Next, roughly chop parsley and sprinkle ½ the parsley on top of the slices of bread. Place in the oven and bake for 8-10 minutes until lightly toasted.
- While the toast bites are baking, combine bruschetta ground chicken, breadcrumbs, parmesan cheese and egg in a large mixing bowl. Mix well until combined and then roll into 16 small meatballs.
- In a large skillet place 2 tbsp. of olive oil and heat on medium for 1-2 minutes. Add meatballs and cook for 3-4 minutes on each side until golden brown.
- Remove the toast bites from the oven and top each toast bite with 1 tbsp. pasta sauce, add 1 meatball and then top with 1 slice of fresh mozzarella.
- Place back into the oven and bake for an additional 5 minutes until cheese is melted.
- Remove from the oven and top with remaining chopped parsley and enjoy!
