BRUSCHETTA BREAKFAST HASH

This is a great weekender if you're looking to feed a few, or have some leftovers. You can dial this up or down depending on the crew and your skillet size. My example feeds 3-4.

 

INGREDIENTS
  • 1 pack of Mighty Spark Bruschetta Ground Chicken (1lb.)
  • 1 bag of frozen potatoes/hash browns
  • Eggs, 1 per person
  • Shredded cheese
  • Salt & pepper
INSTRUCTIONS
  1. Prep the ground chicken in a skillet, browning and turning
  2. Transfer the cooked ground chicken into a bowl
  3. Add the frozen taters to the skillet and add a 1/4-1/2 cup of water and put a tight fitting lid over the skillet.
  4. Cook the taters 8-10 minutes, stirring only once or twice. We want them to get a crust.
  5. Add in the ground chicken and mix it all up, creating little pockets to crack the eggs into.
  6. Cover up again for a few minutes until the eggs reach your preferred "doneness."
  7. Sprinkle with salt & pepper to taste, add cheese and pour a mimosa or bloody. We're brunch'n now!
