BRUSCHETTA BREAKFAST HASH
This is a great weekender if you're looking to feed a few, or have some leftovers. You can dial this up or down depending on the crew and your skillet size. My example feeds 3-4.
INGREDIENTS
- 1 pack of Mighty Spark Bruschetta Ground Chicken (1lb.)
- 1 bag of frozen potatoes/hash browns
- Eggs, 1 per person
- Shredded cheese
- Salt & pepper
INSTRUCTIONS
- Prep the ground chicken in a skillet, browning and turning
- Transfer the cooked ground chicken into a bowl
- Add the frozen taters to the skillet and add a 1/4-1/2 cup of water and put a tight fitting lid over the skillet.
- Cook the taters 8-10 minutes, stirring only once or twice. We want them to get a crust.
- Add in the ground chicken and mix it all up, creating little pockets to crack the eggs into.
- Cover up again for a few minutes until the eggs reach your preferred "doneness."
- Sprinkle with salt & pepper to taste, add cheese and pour a mimosa or bloody. We're brunch'n now!
