Gouda, Riesling and Spinach Butternut Pasta

Serves: 2-4
Ingredients
  • 1 package Smoked Gouda & Riesling Chicken Sausage by Mighty Spark
  • 1 package Butternut Noodles by Cece’s Veggie Co
  • 2 cups spinach
  • ½ cup ricotta or 8oz goat cheese, if desired
  • 3 tbsp balsamic vinegar
  • 2 tbsp oil of choice
Instructions
  1. Add oil of choice to pan on medium heat. Coin-cut the Smoked Gouda & Riesling Chicken Sausage and add them to pan. Stir occasionally and allow to brown on sides.
  2. Add Butternut Noodles, sauté for 3-4 minutes. When you can pierce the Butternut Noodles easily, turn off the heat.
  3. Add in spinach and balsamic vinegar and quickly toss with sausage and noodles to heat through.
  4. Top with ricotta or goat cheese to serve.
